Sweet (Sugar-Free) Glazed Salmon

Ingredients
Serves: 3–4
- 1.5 lb salmon (≈ 680 g), fresh or thawed
- 2 tbsp olive oil ¼ cup Lakanto Golden (or Lakanto Brown if available; Golden is widely available in Kenya and works best)
- ¼ cup soy sauce
- 2 garlic cloves, minced
- Juice of 1 lemon
- 1 tsp salt ½ tsp black pepper
- Optional garnish: lemon slices, chopped parsley
Method
Preparation
- Preheat oven to 180°C (adjusted slightly for better salmon texture retention).
- Line a baking tray with foil.
- Pat salmon dry and place on foil.
- Season with salt and pepper.
- Fold foil edges slightly upward to hold glaze.
Glaze
- In a bowl, whisk together: olive oil, Lakanto Golden, soy sauce, garlic, lemon juice, salt & pepper
- Pour glaze evenly over the salmon.
Baking
- Cover salmon with another layer of foil.
- Bake for 20–25 minutes, until salmon reaches ~63°C internally.
Caramelising
- Remove top foil and baste salmon with pan juices.
- Switch oven to broil and cook for 3–5 minutes until caramelised.
- Garnish with lemon and parsley if desired.
