Strawberry & Toffee Bread

Ingredients

  • 2 cups almond flour
  • ½ tsp salt
  • ½ cup Lakanto Golden (best replacement for Lakanto Brown; gives a warm “toffee-like” flavor)
  • 1 tsp baking soda
  • 2 large eggs, beaten
  • ¼ cup butter, melted
  • 1 cup sliced fresh strawberries

Method

  1. Preheat the oven to 180°C and generously grease an 8×4 inch loaf pan with butter or cooking spray.
  2. In a large bowl, combine the almond flour, salt, Lakanto Golden, and baking soda.
  3. Fold in the beaten eggs, melted butter, and sliced strawberries. Mix until well combined — the batter will be thick.
  4. Pour the batter into the greased loaf pan and place it in the oven.
  5. Bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool before slicing and serving.
