Melonpan Cookies

Ingredients
Makes: 10 cookies
- 100 g unsalted butter (softened)
- 75 g Lakanto Classic (plus extra for finishing)
- 1 egg
- A dash of vanilla extract or vanilla essence (locally available alternative to vanilla oil)
- 60 g wheat fiber
- 35 g almond flour (almond powder)
- ½ tsp baking powder
- 1 tbsp Lakanto Classic (for finishing dusting)
Method
Preparation
- Preheat oven to 170°C (340°F).
- Line a baking tray with parchment paper.
Dough
- In a bowl, soften the butter until creamy.
- Add Lakanto Classic in 2–3 batches, mixing well each time until light and fluffy.
- Add the egg in 2–3 portions, mixing thoroughly after each addition.
- Stir in vanilla.
- Add wheat fiber, almond flour, and baking powder. Mix until a soft dough forms.
