Marinated Chicken Kabobs

Ingredients

  • 1 lb (450 g) chicken breast, cut into bite-sized pieces
  • ¼ cup Lakanto Golden (best substitute for Lakanto Brown)
  • ¼ cup coconut aminos (or soy sauce)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Wooden or metal skewers

For Lakanto BBQ Sauce

  • 2 tbsp Lakanto Golden
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tbsp water
    (Simmer 2–3 minutes until slightly thickened.)

Method

  1. In a bowl, mix together Lakanto Golden, soy sauce or coconut aminos, olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken to the marinade and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 4 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Preheat your grill or grill pan to medium-high heat.
  5. Thread the marinated chicken onto the skewers, leaving a bit of space between each piece.
  6. Grill the kabobs for 6–8 minutes on each side, or until the chicken is fully cooked.
  7. Serve hot with your BBQ sauce of choice, or the homemade Lakanto glaze.
